Jim good articile I would like to see more articiles written about various espresso machines and how they work in greater detail. Possible topics pre-infusion , new technology, types of metals used, boiler design and layout, different types of pumps used. This information would be appreciated. Thks

nice article, it's good to see something that covers the basics. It takes a lot of reading of bits and pieces in the likes of Alt.coffee to pick up this type of info.

Intersting, I am currently rebuilding my older Victory Arduino, it is a two group with a vertical tank. This system has one element and a thermostat, but two tanks. one smaller tank inside the other. The smaller tank feeds H20 to the left and right groups. Why the smaller tank?

Great article. Could you let us know more about how brew temperature is regulated with a heat exchanger? Don't they use pressurestats? If so, why does it get to hot after sitting?
