Thanks for the feedback so far. George, let's hope that others can ramp up faster as a result of this article. Tarik...yes, the shot went longer than expected. I wanted to get at least 2.5 ounces. The crema was still dark, but getting lighter. If you enlarge the image, you can just see enough on the right spout. That shot was good enough, no gosh shot. I'm still searching for my favorite blend. thanks again, Ed
Great Journal Ed,& nice work! This will definitely help newbies with their new Miss Silvia's to start producing great shots sooner & eliminate most of their frustration. If I may, I'll suggest you try some other blends. The grounds in your portafilter pictures look pretty dark. So many places just burn the heck out of their "espresso" blends. My current favs are the Norte blend from Supreme Bean (www.joetogo.com) and the Dolce blend from Vivace (www.espressovivace.com). Both are a lighter roast and make a great, oozing reddish brown shot when prepared properly.
I use the cover of my Rocky grinder for leveling, the flat portion to remove excess coffee, and then I use the round portion of the cover with an angle of approx. 45 degree, leaving a 'slight' depression in the center of the pf.

Loupe... After I posted, I realized that I should have said that the 'blend' was roasted by me. They were not over roasted. They were roasted to 'first-oil' (ie: first glimmer of shiny beans, not heavy gloppy oil.)
Anyone know if there is a relationship between darkness of roast and color of crema?
jeanboucher.... good tip for those that have a Rocky. Maybe I can use that excuse (I mean technical justification) for an upgrade. Thanks to all..
