Unfortunately, Aaron, I share your problem as an espresso junkie who knows what they're doing. I've been all over the northern and eastern sides of Texas (I think I'll just skip the west since whatever's bad here is usually even worse there) and I've done reviews on east Texas baristas, and guess what? THEY DON'T CARE. It's unbelievable. There's a little bakery called Chez Bazan in Tyler Texas where my 15 yr old brother had to make his own latte because 3 workers had no idea how to make a latte (fully automatic compact machine - what was so hard???) He showed them and they just laughed and batted their eyes at him at their own silliness. I call it unprofessional and completely irresponsible. I wrote a review on several drinks from their establishment, and I like the owners, they're extremely friendly - but they make a cup of mud.
