My ristrettos are in the 1oz to 1.25oz range, including crema, along the lines of a 27 second pull.
I'm just wrapping up what I hope is a thought provoking look at the ristretto shot as a mainly N. American (and mainly west coast) phenom. I've interviewed and talked with a lot of top tier espresso people about the subject, compiled notes, and all sorts of goodies. I'm sure more than a few will also disagree with what I am writing :)

I just opened the box (have not used yet) the Zafferino I ordered from Chriscoffee. I was in a hurry because my 12+ yr. old Spidem died. Now I see the Venus for $300 less. It was a stretch to buy to the Zafferino, and now I feel silly. Should I try to return the Zafferino (can I?) and get the Venus. What is the difference between then?

I have both machines here, and while I really like the Venus, the Zaffiro is still, to my eyes at least, the ultimate single-boiler machine you can buy today. There's a lot going for it

For 700 ,I still think the Zaffiro would be a better choice,I too am a Sylvia owner who decided to upgrade,but for someone trying to decide between a sylvia and Venus...I'd plunk down the extra 100 for the Isomac:-)
