So here goes. I just switched today from the Finca Matalapa and was brewing it in my french press. Ground with a Rocky on 55 (calibrated to absolute zero which is 1 below the zero mark). I found it a little acidic for my liking personally, it just seemed to lack clarity. I tried it at 3, 31/2 and 4 mins and 4 was certainly better but I was still expecting more. Today I opened a pound of the El Gallo organic breakfast blend, ground the same and left for 4 mins. Tasted great lots of green apple and spice notes.

Mark any suggestions on the Finca? You seem to be getting something with it I'm not.

Sorry, I saw this late.

Well this week, I've been drinking a lot of Mike Yung's competition blend for the WBC, brewed by said Mike Yung (Canadian Champ), because we put him through judging trials most of this week. His coffee's freaking fantastic. I had what was easily the best cappuccino I've had in maybe two years on Wednesday. The shots when they were at their best had a chocolate - grapefruit connection going on that was quite intriguing.

Sidenote - Mike is going to SO rock the WBC this year. It's his to lose, IMO.

At home, last weekend I had a visiting Barista in from Holland staying with us. He was very interested in siphons and such, so I pulled out an old friend - an antique balance brewer I have. We used the Finca Matalapa and to be honest, it was pretty flat.

So I pulled out the Aeropress and the mystical metal filter, and tried again. This time, we got an amazing cup that cooled down gracefully. The closest thing I can compare it to (this is a bit of a stretch) but have any of you ever had those Japanese chocolate soft candies - the ones with the chocolate coating, and soft, apple-flavoured gummies inside? They're about the size of a peanut M&Ms. That's the taste I was thinking about when drinking the Matalapa.

Wow, I had forgotten about the bean I am drinking now and how incredibly SWEET it is.

SM Columbia Supremo 13356 or something like that.  *Looks at roast log...*  Colombia Supremo 13353 Antioquia, that's it.  What a great snag and at an incredible price.  I really don't pull the fruit out of it that Tom mentions, but my roast was VERY light (stood on the breaks at the end of 1st).  I like the cup a lot though, even without the fruit.  Have been enjoying it through the FP for the past two days.

A 2 bean blend I home roasted--Nicaraguan Highgrown Bold 50% Ethiopian Harar Longberry 50% 7 days post roast.
Very intense chocolate/fruit, good mourthfeel and lingering aftertaste--great as Americano and flat whle/latte, cuts through milk well.

This morning I had some Sweet Maria's Donkey blend (decaf) that I must have underroasted because it tastes like crap as a straight espresso lol, but this evening I had a press pot of Mexican Malinal peaberry.

A slightly over-extracted cup of a 40/40/20 blend of Yemen Ismaili (C+), Yemen Ismaili (FC+), and Sulawesi Grade One Toraja (FC+), respectively.

I roasted a few batches for a couple of people and decided to blend the remnants. It's a little on the heavy side, which isn't always my bag, but it's definitely good.

Yesterday evening:
Peru FTO Cuzco - Ccochapampa Coop from SM.  Roasted to full city and brewed in the Chemex.

This morning was the same coffee/batch but brewed through the Chemex.

I just got a "self-built sampler" through the mail so I have a lot of new coffees to work with.  My first "experiment" is going to be trying a shootout between Menno Simon's Misty Valley and Bagersh Misty Valley (the original "Idido Misty Valley from SM).  I love the Misty Valleys of the past, so I think this should be fun.

Started out with 2 so, so double shots of Black Cat & then brewed up 30g of La Bella Vita with the Finum filter in my 16oz mug. The LBV is a little past its prime for straight shots but made a surprisingly good cup of coffee. Also ground up a lb of Mexican Zaragoza for the Toddy C/B. Should make an interesting Iced Coffee.
