Thanks for the correction.  Fixed it in my post.  I didn't know Bellissimo was behind that forum.  Kind of surprised at that because the design is, well... lacking.  Beliissimo usually pays attention to good design.

We made the decision to go forward now we need to agree on a price for the shop.

In the mean time I am checking out Roasters and starting to look at equipment. Fetco looks pretty good, but I'm just starting to do the research.

I have a coffee consultant coming next week to check out the shop and the local competition.

I am also meeting with a Roaster rep in a week in NYC to discuss using them and how they can help me get started.

Got a close date of 9/12. Now the fun part, ordering the new equipment. We are getting water filter system, new drips, new grinders, new espresso and Ive got a line on a clover. We should have everything in place in about 6-8 weeks. Got training scheduled in about two weeks. It moving now.

I do and have always done smaller, usually start-up businesses.  

  1.  Understand how to do what you intend on doing - equipment/expertise
  2.  Create a pro-forma that does not make overly optimistic assumptions, cut your income projection in half and capitalize accordingly
  3.  Work your *ss off to get it up to speed
  4.  Enjoy what you're doing or you'll make everyone else miserable

and

  1.  Keep good books

Closed on 9/12. Had a great weekend.

Just ordered the drip brewers. Will order CLover in the next day or so. Then the Espresso machine.

Been French Pressing our new beans and people love them.

Its fun and real hard work.

ANYONE KNOW A GOOD POS SYSTEM?

Well its been 1.5 months since we took over the shop. All the new equipment is in (including the Clover). Carrying Intelligentsia beans, also looking at Ecco and Novo. If anyone is in the area of Northern NJ. Come on by and have a cup. Intelli single origins are really good on the clover. We also tried Novo's espresso on the La Marzocco, it was amazing.
