For an expirement i ground 16.5 grams of coffee in my Capresso Infinity grinder. I then dumped it all in a fine strainer. I reweighed it and had lost 3gr. So what does that say about my grinder?
Hi Jerry... Eyes, and fingers...I spread out a little on a white sheet of paper and look at the size of the grains with a powerful magnifying glass, and then I grab a pinch between my fingers and see how consistent it feels.
Perhaps the most accurate (and geeky :-) method is to perform particle sizing with a laser diffractometer. All the espresso grinders that I tested showed a bimodal distribution of particle sizes, confirming what Petracco and others have found. There is a large peak of coffee particles centered around 400 microns in diameter, and a smaller peak of particles centered around 40 microns in diameter. The smaller diameter particles are referred to as fines.
Fines comprise only a small portion of the overall grind volume, but are thought to be critically important in regulating espresso flow. They can impact non-espresso brewing as well, but in a negative way, by clogging paper filters and creating muddiness in press pot coffee.

I used to conduct such experiments, trying to deterimine whether or not my grinder was doing a perfect job, and comparing the consistency of grind between different grinders. Now I take medication, and I'm no longer inclined to do so. : P
