Zingerman's Coffee Company. http://www.zingermanscoffee.com/ If you go the second Saturday of the month at 11:00AM you can take a tour of the roaster and have a sample. Their guys (and gals) are pretty good baristas and the owners run brewing and espresso classes.

Lab in Ann Arbor is decent. They have a good product, but I don't feel like there is consistent training amongst their staff. http://www.labannarbor.com/
