Subject: Gifted some Panama Perci Red (YAY)....
 

Some very thoughtful person gave me 1/2lb of Panama Perci Red Gesha for Xmas, roast date 12/18.    Pulled a shot......very bright, juicy.   Almost too sharp.   Tried a cup in the Trifecta.  Definitely sharp and juicy.  

I'd love to be able to tone it down a bit through extraction.   Any suggestions?   I've tried changing the Trifecta settings, but still finding it a bit too.........Gesha.  ;-)
