Even with roasters that really know what they're doing, I have had to either email or call in order to get their roasting schedule. I understand that some of the larger ones roast almost every weekday, but come on; this is vital information!

FWIW, I don't think this makes a lot of sense. That said, some do -- you will often see specific roasters list specific beans as (e.g.) "Roasted Tuesdays and Wednesdays only."
It doesn't make sense to me because we're talking -- or, at least, I'm talking -- about places that Roast To Order. So -- if no orders for Coffee X comes in, obviously they won't roast any; but if they get a lot of orders for Coffee X, and they normally only roast it on Tuesdays, might they not also roast it on Wednesdays? In other words, even if it's listing on the wall next to the roaster, there has to be some flexibility, and that renders the publication of such a schedule incorrect . . . and THAT will tick someone off, guaranteed! ;^)

Pretty much any of the places I've ordered from have listed their schedules, some every day, some every other day, some only twice a week. Even pointing out like "order by 10am is roasted and shipped same day, after 10am will be done next roasting day" etc. I've seen some though that don't say anything.

Well, actually I never worry about that either, but I usually order on the weekend -- that way, the roaster has the order first thing Monday morning. Usually doesn't matter, though, as one of the coffees I frequently buy roasts on Tuesdays, so my entire order gets roasted and shipped Tuesday; delivered Thursday.

If the roaster's policy is to require that sort of flexibility on the part of customers, it should be posted IMO. Reasonable or not, my expectation when I pull the trigger on a coffee order is that it will be roasted and on its way to me within a day or two unless I read otherwise (and not counting weekends, etc.).

Well, in that case, does anyone know a Pacific NW roaster that roasts-to-order or has a discernable schedule? I have found one that I will be ordering from next.

Every roaster I know of on THE list roasts to order AND dates the bag -- I'm not worried about it. The exceptions are similar to the examples above where it's clearly listed, "Roasts February 4th."
