Hello, I store coffee beans in the freezer and grind them as needed. Recently, I've heard that coffee beans should be stored in the cupboard or pantry. Wouldn't the beans become rancid in a short period of time? I would appreciate if anybody has some advice on this.

Please use the search function on this forum to search 'freeze' 'store' or whatever you wish. Also visit home-barista.com and search. Nick ('HB' on home-barista) is very knowledgeable about this. You will find a dozen opinions on freezing and everyone is in love with their opinion, but I believe most do not know for sure. Try to find a blog where someone did a blind taste testing on frozen and unfrozen beans. Most people believe: Airtight in Freezer is good for 2-3 weeks. Refrigerator freezers have a defrost heater coil in their floor that cycles on and off and shortens the storage time of coffee in a refrigerator freezer. A deep chest freezer has no such function and is said to be best for long term (month?) storage. Using a foodsaver vacuum to evacuate a rigid jar is ridiculous because the level of vacuum (ie air removed) is minimal - the pump is not powerful. It is best used to evacuate a deformable bag storage. Flushing rigid jars with nitrogen before freezing. is untested by blind taste tersting, in my opinion. Always thaw beans to room temp before opening jar, otherwise condensation moisture will ruin them. Never use refrigerator.
I freeze my beans in Ball canning jars, pint size, in the refrigerator freezer and only open what I need for a few days. It is my opinion that, once frozen, coffee stales more quickly than never frozen. No one has investigated or discusses that, to my knowledge. I base my opinion on the 'bloom' during pourover of fresh beans that diminishes during the first week of use but seems to diminish more quickly after beans are frozen.

Freezing is fine if done properly. Only freeze in small lots that will be used in a few days. Remove as much air as possible before freezing. Thaw beans sealed to room temp before opening bag Do not freeze twice, once thawed, use them up.
