If you expect too much from a barista, I think you will just be frustrated. I know you have better idea in making espresso than a barista in coffee commercial shops. Any baristas are just doing what they think as the right espresso. They are commercially oriented and after of making a lot of espresso though they are doing their best to satisfy their customers. However, if your technique is not familiar with them, then probably they won’t apply it.

 
Did you know...? Dark roast coffees actually have less caffeine than lighter roasts due to the fact that the process of roasting burns off caffeine.
