I tried my hand at roasting today. The sad thing is I don't even have my machine and grinder yet :( (Silvia and Rocky thanks to the advice from you all). It was supposed to be here on Saturday but Fedex messed up I assume and should (crossing my fingers) be here tomorrow. I ordered some green beens from Sweet Maria's and have been sort of scared to dive in. Yesterday someone posted how easy it really is, so I did it!! I'm SOOOOO excited. I roasted some decaf (donkey blend) and some regular (monkey blend). My thermometer only goes up to 392 degrees so I had to do it all by ear. I roasted in my whirly pop, with lots of turning and swirling. It was so simple. I just opened the container that I have them in and took a long deep whiff. OMG!! I have really never smelled coffee like this. It smells so good I could take a handfull and eat it. I know my machine won't be here till later in the day so I'm thinking a nice french press in the morning. Heck...I think I may have a decaf right now ;)

It's all so much fun & an incredible learning experience! {:-D I felt the same way starting out with my HWP Hearthware Precision roaster 4½ years ago, & I still have it & use it every other day or three!

One thing that I like to do is after the coffee as cooled, put it in a jar with a lid. Then after a few hours or a day if you are able to be that patient, carefully lift the lid and take a big sniff. Its even better if you roast a few types of beans at the same time and put them in different jars. Its very interesting to smell the different aromas that the beans develop as they degas.
Go right ahead, try it even if its not done degassing. Its part of the pleasure of home roasting : total control and the ability to experiment.
I remember my first roast ... almost random and yet, when I poured my first shot and saw it comming out, 90% creama with the fabled tiger stripping ... I remember thinking to myself : if my life were a movie, this is the momment where Betthoven's 9th symphony would have started playing.
Oh ... welcome to a whole new world of addiction ;)

I can't count how many times a day I'm in the kitchen sniffing my jars of homeroast! Glad I'm not the only one.
As for grabbing a handfull and eating them ... go for it! Well, maybe not a handfull, but I always chew up a bean as soon as it cools. Wondering if I can roast by taste (during-roast sampling not advised) ...

Welcome and Congratulations! My wife loves that I roast now. The garage always smells of freshly roasted coffee. And she has actually asked me in the evening what I think I’ll brew the next morning!
We’ve taken to performing a ritual of looking over the beans when I’m done roasting, taking a big whiff of from the jars and eating a few out of each batch. I haven’t decided if there is any real correlation between the bean taste and the brewed cup, but it’s a fun ritual just the same.

And I thought I was the only one who chewed coffee beans (without even so much as a chocolate coating)! One of my tests of a good pour is how close the brew comes to the taste of a bean when chewed.

I betcha 8 or 9 out of 10 homeroasting geeks do it! {:-D I've done it since day 1, to see how that particular roast developed & to check the degree of "doneness" or color depth stratification it the center thickness of the bean.
It's a little hard to explain, but sort of like a medium rare steak (what it looks like internally)., but reversed. On the HWP & a City - Full City roast, I can see a sandwiched stratified center layer of darker/richer carmalized bean sugars.

I always crunch on a few beans while they are cooling. It gives me a good idea of the taste and texture of the roast. Over roasted is brittle. You can taste the burnt taste if you over did it and the bready taste if you under roasted.
