Subject: Hearthware i-Roast 2 Roasting Stages
 

Does anyone have some tried and true roasting stages and times for the i-Roast 2? What I'm looking for a the varital (i.e. Sumatra, Kenya AA), Staging times, temps and roasts (i.e. City, FC, FC+, Vienna).  I've done various web searches and come up empty.

This thread has a lot of good info for the I-Roast.

Personally this is the profile I have been using and love it

1: 355 5:00
2: 405 2:30 First Crack near the end of this segment exact time depends on the bean
3: 420 2:30  Build temp to avoid stalling roast
4: 435 1:00  Build temp to avoid stalling roast
5: 455 4:00  Second crack usually within 30 seconds of stage

Lifestar,

Great roast!  Good for a darker roast.  I was also looking for something between FC and FC+.  It's amazing that 15 min. doesn't charcoal the beens.  Still new to this roasting thing, but learning quickly.

I use the roast for pretty much everything.  For my FC Roasts I usually end right at the end of stage 4 or start of stage 5.  For FC+ I stop about 30 seconds into 5 or whenever I hear the first snaps of second crack.  

No matter what profile I use I have had poor results with the city city+ roasts with the I-Roast.  They come out to bright for my tastes.

Do you find it hard to hear the cracks?  The iRoast2 is a bit noisy.

I did at first.  Now I have no problem hearing first crack.  Second crack can be tricky depending on the bean.  For most beans its not a problem but for some beans like the Monsooned Malabar the bean itself hitting the glass after first crack sounds a lot like second crack to me.

I don't know if it makes a difference but I roast in a fireplace so the natural draw of the flu handles all smoke issues. I think the shape of the fireplace may help focus the sound back into the room because I can hear first crack from across the room.

Just tried your recommendation for FC+ - 30 seconds into Stage 5.  That's what I was looking for.  With the 5-stage, you sure get an even roast.  Thanks for your feedback.

i also tried to find this information online without much luck.  i spoke with a very knowledgeable person at hearthware (don't remember his name) and after some experimentation ended up with the following profile for metropolis greenline beans:

stage   temp    min:sec
1          385      5:00
2          420      2:20
3          400      0:45
4          345      3:00
5          410      1:00

the beans end up looking like full city roast to me (based on sweet maria's roast pictures and descriptions).

i tried to listen for the crack, but could not tell the difference between crack and beans bouncing off the glass.

my favorite roast is intelligentsia black cat blend but for me it is too expensive to have it shipped in small quantities.  metropolis greenline beans roasted with this profile are almost as good and cost much less.

i am liking the espresso resulting from this bean/roast and my macap m4 and oscar pro.

i am interested to see what bean/roast profiles other people like.

Being still a novice to roasting, what I find so confusing is the staging and temp settings.  Lets take a Peru Concurso Huallaga which is rated at a City+ roast (400 - 415 internal temp). How do you correlate the internal bean temperature to the staging times/temps. At what stage do you want to achieve the internal temp and how long to maintain.  What is the advantage of 3 stages versus 5. I know on the IR2, the OB temp is 50 deg. lower than the actual temp.  Is the actual temp the internal temp.  I know this isn't exact science, but there has to be some guidlines based on the type of been and recommended roast level.

i can't answer your question.  my conversations with a very helpful person at hearthware got me on the right track.  keep in mind that your roast profile will have to match the beans you are roasting.  talking to the hearthware people and trial and error worked pretty well for me.  good luck.
