Hi again. Today I did my third roast in my newest roaster, my Galloping Toronado, actually its a awsome B/M with a Galloping Gourmet T/O. I do not have a thermometer and I roasted 2 and 1/4 lbs with the temperature control set at 500. Around 12 minutes into the roast I checked and the beans were very dark on the outside but extremely lite in the crack. Is it possible that I'm using too much heat in the beginning of the roast? It took just at 16.5 mintues to finish the roast. I also usually roast to an espresso as we like out coffee strong, but i think I'm using too much heat to start with. Any guidence will be appreciated.
