Hi,
I've read about regulating the voltage with a Variac upon roasting beans. I understand that a Variac actually has two usages:
A - To have a consistant voltage between batches, a voltage which will approach 115V B - To change the voltage level during the roast, to finetune the roast.
I have just acquired a Hot Top and was wondering if I should get a Variac as well, and if so, if I should use it for both A and B. I hear that some companies will void warranties if machines are used with Variacs. Any input on that ?

I know people who use a variac with the Hottop to slow the roast down by a minute after the first crack. You cannot change the profile very dramatically, shave a minute off here, add one there is about the extent of it.
Don't know about the warranty. The unit has to be designed to operate between 100 and 125 volts or so to meet the various voltage levels commonly found, so operating it on variac in this range shouldn't hurt it.
