Subject: Explain to me why to elongate roasts.
 

So i have my new behmor, which I love, but I don't really understand why/when to use other programs  besides P1, the ones that heat up slower.
I like Sumatra beans, especially Celebes Kalossi or Toraja as it's known now. I like deep dark flavors with lots of body and low acid.  Usually I do it to a FC-veinna roast.  

any thoughts/explanations would be appreciated.

To get those flavors you like. Too fast and the coffee tastes acidic, too long and its baked. I use a P1 and try for 1C at about 6 min. I forgot to add that 2C arrives between 9 and 11 min. This is for a popper. Drum roasts can be a bit longer.
