Hi...here's how I've found out what coffees I like and the proportions to blend/mix...

Talked to local roasters and visited them in their shops, bought some of their house blends, and listened as they dropped hints of what was in it
I'd say things like ''I think I taste some Sumatra in this...'' and they'd say things like ''Naw…it's Sulawese..." and the like

I'm also guilty,
Also,Often someone in a cafe knows something about what's in the blend or how it's roasted.

Asking for a couple beans to look at will often draw in the higher ups. Then you can work them over.

here's one  "this shot blend is so fruity it can't be all wet processed"

I think that just being up front that you are a home roaster with no intent of reselling or providing the info to a reseller would work just fine.  Mentioning that if you happen to share with friends you would reference the roaster as the source of the "recipe" may additionally help overcome any hesitations.

Absolutely Len, None of us want to hurt their business. That's why I mentioned "for fun". As we often will try to get all the information we can from Roasters and Cafes because we're coffee geeks but also knowing that we must be responsible with it.

I am reminded of how Stumptown coffee in Portland/Seattle will not sell any of their coffees green, for fear of reverse engineering.

Better to edit to say some Roasters.... And that is fair and understood. Some that sell greens do not offer the ones in their espresso blend ;-) or at least only some of the components ;-).
