I have some of the AAA cumbre beans and also the iRoast2.
Do any of you have a roasting profile suggestion for these beans - I use a Rancilio Silvia V3 espresso machine.
Should the beans be roasted to beyond 2nd crack? Up to oilyness? I have roasted them to the medium roast setting at the moment (i guess around 7 minutes?) and am not really enjoying the flavour. very planty and earthy, thin and no natural sweetness but I do not know if these beans should be roasted until oily?
I would appreciate any advice, particularly if you have a suggested roasting profile.

My first purchase of beans, years ago, was from Invalsa. Right in my neck of the woods up here in New England. I enjoyed roasting them just a bit past 2nd crack; about 10 seconds in on a BBQ drum roaster. I don't know what you are roasting with (air type roaster?) but 7 minutes sounds too quick of a roast to me. Are you even getting to 2nd at 7?

i wasn't getting to 2nd crack because i'd been reading that beans reaching the 2nd crack, never mind oily...were over-roasted and so I thought to be roasting a lot lighter. the i-roast is a hot-air style roaster, yes.
i want to avoid starbucks style 'toast' flavour but do want a caramelised sweetness.
i have roasted some tonight using a default profile which is 450f for 10 minutes and got a very dark roast with the oil sheen coating all beans evenly. i'll wait to see what they taste like. no idea if that's just past 2nd crack or not as machine is so noisy and smoky, i have to leave it out on the terrace to do its thing.

May be a bit too dark. What you want are beans with flecks of oil on them, not totally covered. I'd say a Full City + roast. Seems to me that you have a French Roast or even an Italian Espresso Roast on your hands with the latest you roasted. Try for 8 1/2 min next time, possibly just 8. Looks like things happen fast with that Iroast you have.

i'll give that a go next, first I need to let the current beans rest a couple of days.
i managed to get a reply back from nelson valverde (so props to him!) from invalsa. He recommended:
For espresso I like it moderately dark (just at second crack). Depending which version of the I-Roast2 you have, I would start with the P1 profile. Are you using one of the preset profiles or your own? It sounds like you may benefit with a slightly darker roast. (add more time to the roaster), but I would not roast them for espresso until they are oily. That is my personal preference.
So, he seems to be saying almost exactly the same as you in that 2nd crack and a few more seconds more...and stop before oily.
