After each roast, I actually taste/eat one or two beans. If too underroasted, it will be hard to crush/crunch. I also will have a good idea that it is not baked.
Ok, a couple days after my last post, I ground and brewed another batch of beans. BF was going on about how good the roast was. And it was much better. The beans did need about a week's rest (as was mentioned before) and that weird taste was gone. I haven't had a chance to fiddle with it more, but I will since I'm feeling like some fancy coffee drinks.
