I plugged it in and set my profile and it ran for a few minutes and then quite? I un-plugged it and plugged it back in and it now gives me an error code of something like PoE. Any suggestions, can this be fixed on my own? are parts still available?

Except for the roasting chamber I don't think parts were ever readily available. The roasters have not been available for some time either.
At the website: https://www.i-roast.com/asp/pro_02_05.asp it lists parts: 6) Power Base Assembly No user serviceable parts - return required Price:$139.00 USD (40011B) Discontinued It says"Discontiniued" for all parts. Sorry.

It will flash a "PoT" code when the chamber is not locked onto the base properly-- you have probably already checked this. There is a switch in the base that prevents the roaster from operating with the chamber removed. I repaired two of these -- one had a blown thermal fuse and the other had a loose wire connection. Seems like a nice little roaster. I was searching for a list of error codes but could not find anything.

I have an iroast2 that still works, but the roasting chamber is hairline cracked (was replaced twice before for same reason). You cannot get parts for it any more (dont give them a credit card number because they will charge you and never ship an item). I filed a BBB claim against them, and got nothing. They are in financial ruins, and will take any an all money, without delivering a product. Your best bet is to try to fine one like the ebay auction. I may; put mine up for auction for anyone looking for the base (you can still use the chamber with a crack, although it may come apart one day). It stinks, because I really liked roasting small amounts in that machine.

Jack your a Genius! The Pot must have worked loose, and I didn't realize that the pot had to be on to not get an error code? Praise God, I'm back in business.
