I bought a Hot Top a week or so back and wanted to add some temperature probes.. I was to cheap to buy an extra door and I had some stainless on hand so I made one and installed the probes.. Here in Georgia its been 104º + the last few days and now I'm think I should have bought one :)

Looks like a nice job. I might suggest bending the bean probe a little further away from the back wall. It would put it a bit deeper in the bean mass and further away from the hot metal of the chamber for better readings (but just guessing since you did not show a pic of the probes installed in the roaster from inside the chamber.

The distance from the wall sounds OK. Hitting the spoke or stirring vane is one way to find out how strong your probe is. Ya.. I know from experience. What about the depth in the bean mass. That is even more important.
But the bottom one is that if you are getting consistent readings from batch to batch, and you can use those to control the roast the way you like, the actual temperature values do not matter at all. In other words, if your display always shows first crack at 350 degrees F, and it does so every time, then it is a simple matter to predict it and make the necessary adjustments.
