I just got some Liquid Amber from SM. They recommend Vienna roast, which I know is dark, but how far into 2nd crack should I go?
I'm using a modified air popper and will be using either a moka pot or aeropress for the espresso.( I know it's not exactly espresso, but it is what I have for now.)

Lets say about the beginning of rolling 2nd crack. The timing will vary due to different methods of roasting.

Thanks. I roasted some up last night. It looks about right to me. From what I understand, now I have to let it rest for about 5 days or so. We'll see how it turns out.

Good. Consider getting an Airscape from SCG or something like that. It will let you store the roasted coffee, releasing the CO2 for the first couple of days before you close the seal to keep it fresh.
I like to try some of the roast after 3 days, then 5, 6, 7, ... Yes, it does change, and that's part of the fun of home roasting.
