Hey all,

   I just wanted to say that I am VERY pleased that I have discovered using the filtercone-holder setup.

Here's my process:

After I pre-measure the water in my kettle, i put it on HIGH on the stove....then:

a) Prewarm mug in microwave (with water in the mug)
b) Place filter in the filterholder, and pour the hot water from the pre-warmed mug to soak the filter, and warm the holder.
c) Grind my fresh beans - I like to do it a bit finer than traditional 'drip' setting.
d) Use 2 heaping tablespoons per 8 ounces per 1 cup), and place in the filter.
e) When the water is boiling, take it off the stove, and pour about 2 tablespoons of hot water in the the grinds.  Allow this to bloom for about 20 seconds or so - stirring the whole time
f) Pour the rest of the water in the filter and stir until it's gone!  (there's usualy a few teaspoons of water that won't go through the filter - that's fine with me.

Needless to say, this process gives me some of the freshest, best tasting coffee that I have ever had - and that can be made, for that matter....

I have recently discovered that I like it better if I don't stir after the "blooming" process.  Also, I like it better the hotter the water.  I pour right after the boiling noise goes away -- probably around 205 - 208 F.  

I can't wait for my Chemex to show up!!!
