Curious what people's thoughts are on using filtered water vs spring water when making a shot? Does it really matter?

Totally agree that water makes a difference. The cleaner the water the better the brew - SteveRhinehart posted a great article. Personally, the way I think about it is that coffee is no different than cooking. Use great ingredients and you'll get a better output.

That being said, if both the filtered and spring water taste good to you by themselves, either should be great for making your coffee/espresso.  If you like the taste of one and not the other... well, garbage in, garbage out.
