I've had my infinity for a long time now. I'm thinking about 5-6 years. It has become my work grinder as I got a nice espresso set up at home.
My FPs have been rather thick and full of sludge. So I recently switch to a Chemex. After brewing, the filter is coated with a fine brown film with the medium grinds beneath it. The old gal seems to be producing quite a bit of dust.
Is she just too old? Need new burrs? Maybe just a good old fashioned tear down cleaning?
I'll try and get some pics when I brew my afternoon pot of the Chemex filter. Maybe it's just normal with a grinder of this caliber.

I had my Infinity about 7-8 years and recently started noticing tons of dust and flakes everywhere in the Chemex filter. I switched over to my Gaggia MDF that I had only used for a short time for espresso. Huge difference. I had forgotten what a clean uniform bed of grinds was supposed to look like. The dust is not helping you get the best extraction, although Chemex is a more forgiving pour-over than other methods. You could call Capresso and inquire about new burrs which should definitely help, or get a new machine. The dust is not normal, it sounds like the burrs are worn down. A friend of mine also has an Infinity (5-6 years old) and mentioned he has noticed similar issues.

Thanks. I have a Rocky at home for my Gaggia Classic. This is just my old grinder that I brought to work.
I wonder if it will be cheaper just to get a new Infinity then to get new burrs. I will find out.
Just checked on Capresso's parts website. New upper burr is $16. It seems the lower in not replaceable. I have not taken this apart yet. Is the lower burr often a problem, or will a new top burr solve the issue?
As you can see from the second pic, everything is coated with a silt. Up by the rim of the filter, you can easily see the size the grounds are supposed to be vs the silt.

I have a Classic also. But it's been so long since I used it, I'm scared of everything it would entail to get it back in action. The shots were great but the frothing was very difficult and inconsistent with the black plastic frothing sleeve.
I've been using a Chemex for a couple years. I recently picked up a full Hario set up and a scale. Makes the whole pour-over process alot more interesting. The v60 is challenging but very rewarding when you get it right. As far as your Infinity I'm not sure about the bottom burr but I'm assuming someone will chime in with an answer to your question. For only 16$ though it sounds like you might want to give that route a try before purchasing another machine.

5-6 years is a long time for that kind of grinder. Definitely you need to replace the grinder's burrs or the grinder. I personally would get a new grinder though, since the next grinder should last you at least another 5-6 years and Capresso doesn't seem willing to sell the lower burr (a bummer, what's the point of changing just half the burr). Why not get a better one that can maybe last you for 10+ years, with exchangeable burrs?

Definitely worn out burrs; almost a given for 5-6 years of age. If the motor is still strong, and the adjustment ring still works fine, I don't see any reason not to just get a replacement burr. It is the upper burr that effects the quality of the grind the most, so I wouldn't worry about the lower burr.
It's a huge improvement over the original pictured above. However, as you can see, it's still a bit dusty. While this will probably work for drip, I don't think this old gal is FP quality any longer.
