Hi guys,
What's the ratio to use to fill my 16 (call it 17 oz) thermos and make it taste good? I've been using about 2 scoops for a ~10 ounce coffee. Should I be using more ?

Standard ratio and place to start is 60g coffee/litre water and scale up or down from there. You are using considerably more than this I reckon and might have to grind finer to get the same strength.
A set of cheap gram scales is the way to go even if it's just to find out what a scoop of your regular coffee actually weighs. Depending on beans/roast I'd reckon anything between 12-16g for an Aeropress scoop.
Having said that using you tried and tested method 2 scoops for 10oz is pretty much 3 scoops for 16 oz! Even then it's still more coffee than I would use.

I use the AP most of the time for morning coffee; about 16oz final volume. I use around 30g of coffee; I've gotten to where I just eyeball it in the hopper of my Hario Mini hand grinder; otherwise I'd pre-measure the whole beans into baggies or something. I've gotten in the habit of grinding coarser when the coffee is fresher, to account for the fact that I stir more to knock down the bloom, which is the bane of the Aeropress IMHO. Anyway, I try to get as much just-off-boil water into the AP and plunge as soon as possible, then top up to 16oz/half-a-liter.
