My Vario is calibrated to the macro lever at the top for espresso and I set the lever completely at the bottom for the bonavita. I've hear a lot of people complain that their vario would not grind coarse enough for coarse drip or French press. I'm wondering if that would be why I'm getting over extraction notes...
Her are the pictures, now they are not perfect shots technically but you should get an idea of the size...

Here is what my grounds look like for pour over/auto drip. These don't look much coarser than yours. I read somewhere that flat burrs designed for espresso grinding produce more fines which might be affecting the taste of your coffee even with what looks like an acceptable grind size.
These grounds in my photo are from beans I ran through a grinder with the Mazzer Mini burr set.

I chew coffee beans with my teeth while gargling with 195 F water to enjoy coffee. What is this "coffee brewing" device you speak of?
That dosage is awfully low. Try 71 grams (1.77g of coffee to 1oz of water). It's tasting over extracted because you're running too much water through too few grounds. Thus overextracting.
