Hi
I have the 6 cup handblown Chemex. According to the instructions that come with the chemex, the capacity is measured to the bottom edge of the collar and that should be 30 ounces. as chemex measures in 5 ounce cups.
If that is indeed the case, than something is wrong. My chemex holds 740 grams of water up to that point. Thirty ounces would be 887 grams, given that 1ML =1 Gram of water.
Am i measuring incorrectly? Do I have a defective brewer? Has anybody else had this?

I spoke to chemex, who so far has only said they have never heard of this. Well my supposed 30 ounce chemex only holds 25 fluid ounces, which is at the point at the bottom of the wood collar. I also have the 8 cup and 13 cup handblown and these are fairly accurate relative to capacity. Only my 30 ounce has significantly less capacity than advertised.
As of yet, neither the merchant, nor chemex has offered to replace the brewer. The merchant wants to hear what Chemex has to say. Alternatively, I could use my other chemex coffee makers when I want more than 24-25 ounces, but this is a matter of principle.

Question
In a thirty ounce chemex, is the brewer supposed to hold 30 ounces of brewed coffee or are you supposed to pass through thirty ounces of brewing water? These are very different things.
