I chew coffee beans with my teeth while gargling with 195 F water to enjoy coffee. What is this "coffee brewing" device you speak of?

True, the track record on the Brazen hasn't been proven. But it has a good warranty, and stellar tech support behind it. In my opinion, if you are spending over 100 bucks for a brewer, it's worth the little extra for the Brazen just to have the ability to modify brew temperature and pre-soak times.
I never in my life thought temperature makes the difference it does on coffee. I put a cup brewed at 200 and 1 brewed at 205 out of the Brazen in front of 3 friends of mine, 2 of them are NOT coffee snobs, 1 of them doesn't even drink coffee, and they were remarking on the differences. The ability to calibrate and set a brew temperature is worth the slight extra cost of the Brazen alone.

Got my new Brazen yesterday and it's an impressive machine. Well built, it's very easy to program. My altitude was 349 so I was not sure whether to set it for 250 or 500 (it goes in 250 increments) Set the brew temp at 205 and made my first batch this morning. It had a slight bitter flavor should I try it at a lower temp ?

We can't help you if you don't give us any information..
It depends on a lot of variable factors coming together. What coffee are you using? What degree of roast? What coffee to water ratio? What grinder are you using?

Thanks for the tip - I guess this was not a blind cupping you held, but maybe it was - I will give brewing temps a test using my $89 Bonavita PID kettle - programmable from 140 to 212 F in one degree increments - with a Chemex and Able Kone III. The bloom from my fresh roasted coffee is easily tamed with this method and I have yet to see a mess on my counter either.

I'm just a novice here, I used 8T of DD medium roast beans and I used an old DeLonghi Grinder I have. Ground between drip & perc for the gold filter.

Yes I realize that C. Based of what you've told me I'd set your brew temp at 199°F for Dunkin' Donuts & try that, & please report back your results after your brew.

On the BraZen thread, I gave a simple explanation. Simply put, lighter roasts prefer a hotter brew temperature & darker roasts a cooler temperature.
The type of varietal bean & degree of roast (color/Agtron#), coffee to water ratio (brew strength/extract ratio) & other factors (I want to keep it simple so as to not confuse/confound you) will determine the best brew temperature at which to brew your coffee for the best taste profile for that particular bean or blend.
It's not 'written in stone', but comes as you gain experience with a particular machine & its features & brewing various different coffees.

I much prefer the unique design of the TechniVorm over the too-streamlined Bonavita or the too-techy BraZen.
But then, I also prefer the unique look of my Swedish 'classic' Saab 900 over most other cars, & the unique look of my hand-made lugged steel randonneur bicycle.
