Hi
Of all the brewing methods I have tried, I prefer the chemex. I generally brew 20-14 ounces, but sometimes I want to brew smaller. I find the three cup awkward. Can the six or eight cup handle batches in the 13-17 range batches? If so, what grind for this smaller batch? I am using a baratza vario-W.

I've used the 8 cup and 10 cup Chemex and based on this experience, you should have no problem brewing 15 ounce batches in the 6 cup Chemex. I was doing about 20 oz (600 Ml) batches in my 8 cup with regularity.
I would recommend you grind for your target pour time, probably bloom at least 30 seconds and have a pour time of three to four minutes. The grind will vary based on load size and filter.
