I researched this before I purchased it and have read the instructions but am still now sure I am doing this correctly. One of the problems is that I am a new coffee drinker and do not yet drink coffee black. So when I taste the finished product it is hard to know if it tastes the way it is supposed to. And cream and sugar might be covering up a bad output.
When I use 2 scoops and and liquid up to the 2 line I end up with about 2 ounces (1/4 cup) of finished "concentrate". Is that what I should be getting? It seems like a lot of grounds for such a small amount. If that is the correct procedure then how much water should I be adding to it?

That's not the way I use my Aeropress, but I think you are doing it "correctly". Just add hot water to your concentrate to get your cup of coffee.
I use my Aeropress more like a traditional french press. I invert the aeropress, dump in my grounds ( I use a coarse grind), pour in water until the aeropress is completely full. I let it steep for 3 to 4 minutes. I usually stir a little once or twice during steep. Top off the water if I need to. Then put the filter on, turn it over and press.
For me that makes a full cup of coffee. I don't add any additional water. It's perfect for me. I love the coffee I get from the aeropress. I use it every day.
I've read lots of threads here about the aeropress, and people use this thing all kinds of ways. So I wouldn't focus on the "correct" way to use it. I would just play around with it until you get a cup of coffee you enjoy from it. But nothing wrong with doing it "correctly" either.

I use the aeropress like my manual cone. Same amount of coffee, same amount of water, same grind. I might make adjustments depending on flavor I got from the last cup. I just let it drip through then I can press it when I'm out of time or when it's run its course.

The instructions explain that you have made espresso-strength concentrated brew. Now dilute that with hot water to make a total of 10 oz American coffee (5 oz per scoop). Pressing, then diluting is key to smooth brew.
Or, you can dilute with milk instead of water to make a latte.

Listen to Alan, he invented the Aeropress. OH, BTW, I agree with him, not that it means anything. I have used inverted and normal, the Areopress works great either way.
