Ok basic question but when timing your shot, clock start the moment you press the button on your machine or when coffee starts flowing? I'm wondering because with my Silvia that can make a 2-3 sec difference.

Opinions in this vary, and you'll get answers telling you both are right. Red bird espresso's roaster's instructions say to start timing when you see the first drip. I do this. However, my personal thought is the extraction begins the moment the water hits the grounds. Bottom line is that it doesn't really matter as long as you don't go back and forth. Always remember, what matters most is how it tastes.

Similar to above for my Gaggia, SBDU. I time from the first drip, about 5 seconds after pump switch on, and have read about timing either way. In the end, I followed the Redbird site suggestion for thier coffee. I usually use Redbird Espresso and Redbird Blue Jaguar. Aim for taste and consistency.

Agreed for taste and consistency. Even though I time from when I push the button, it still can take up to 5 seconds for the first drops to come through. As long as you're close to your desired time and taste each time, it's successful extraction!
