Very interesting, Yakster. If you get more sweetness and fruity notes with a lower temperature, what do you get with the higher temperature? More body? I just got my Brazen and I haven't brewed enough pots through it to draw any of my own conclusions.
I also get very significant differences by varying the temp 1 or 2 degrees either way. And agree that lower tends to be sweeter. I'm typically operating in the 200-203 range. It seems to me that the grind setting effects body more than temp does. I'm using something very close to an espresso grind, which is where I get more of the body I'm after. Not sure if that's related to my specific grinder, I'm using a Rocky, or if it's generally the case. I've tried coarser settings but didn't like the results.
