Still experimenting with our Chemex. When we first got it, our beans were only four days from roast. We poured 10 oz. of water through 21g of coffee, and it was the most enjoyable coffee experience we have ever had. However, since then, it hasn't been as good. The second time, we got the measurement off by a gram, but went with it anyway. Uck! The third time, we got the measurements correct, but the flavour was off . Here we are on the fifth time, and we went by Galla Coffee's calculator and poured 10 oz. of water through 17g of coffee.
This is our second-best cup we have had. It is quite similar to the first cup, but we have some questions.
First of all, here is our coffee log. Please look at it, as it explains more than I could type out here. :)
Our questions: - Why did our third serving not render as well as the first, using the same timing and measurements? - Why did our more recent cup have great body, no extraction issues, but not have as much flavour?
