I turned the grind to one notch finer (so on about 14 now) and it did seem to taste better. Hard to find just the right grind. Chemex says the grind should be similar to the size of sea salt but that's rather objective as well so I'm still working to fine tune it.
One thing I did notice was that the coffee tasted the best at it's hottest, immediately after adding cream. As the coffee cooled in my cup, the taste did seem to deteriorate (which is probably why my coffee doesn't taste as good when I put it in my Contigo mug and take it to work in the morning). So that makes me wonder if I should use smaller cups (using a 20oz cup now and put all 20oz in at once) and let the coffee stay warm in the Chemex then just pour it as I need it. Guess I'll have to experiment with that a little too.
