I grind by weight in my Vario-W and Preciso Esatto, so in MY world weight is weight, and I measure water by either the liter, or parts there-of. So apologies for the mixed weight/volume. As I don't use "tablespoon" measurements, I just assumed that stuff I printed referred to 2 tablespoons of ground coffee as a measure of weight, not volume. I would also not recommend anyone measure by tablespoon. I tested going from as level as I could eyeball, and then one that was slightly rounded, and the difference was 1.7 grams on average. Multiply that by 12, and it would have a significant impact on ratio, doing 12 such tablespoons, about 20 grams!
I also include the bloom in the overall brew time, but like it's been stated: go with what tastes best to you. Try it a few different ways. Chances are, you're going to hit that one that just blows you away, and you'll just know. It's like love, but better. ;)

Ok thanks. What does over extracted taste like?
Taste trumps all, everything having to do with steep times and grind, even brew ratio, are suggestions. I have trouble hitting the 4 minute time on the Chemex all the time. Go finer on the grind and longer on the contact time IF it does taste weak, and find the combo that gets a stronger brew without tasting overextracted.
