I've just opened my second box of Chemex filters so I know I've brewed 100 batches. Almost all of these have been Ethiopian coffees, though from 4 different companies. Almost all my batches have been good - some more so than others, but almost every one has been very drinkable.
A few, just a few, have been great. And I'm wondering what I need to know and do to make each batch great. (Or at least make the next batch better.)
What are the tricks/tips/methods to tweaking the brew to make it more/less sweet/bitter/strong/weak?
For instance, I read somewhere that using hotter water will bring out more of the "higher" tones in a coffee. (Is this true?)
I have no problem burning through a bag of coffee trying things, making 10-12 batches trying small differences, but right now I'd be flying a bit blind and it would probably be a bit wasteful. Having some specific things to try makes more sense.

Hotter water / finer grind tends to bring out the bitter qualities. I (thanks to good advice on this site!) have had better luck, particularly with Ethiopian coffees, with a brew temp at the lower end of 195-205 F and quite a coarse grind with the Chemex. That's what I'd recommend -- a little coarser, a little cooler, and see if that helps or not.
