Subject: Brewing Coffee on a Cargo Bike
 

I am starting a new business. I have had a lot of experience as a barista (La Marzocco/Robur E)

I am now about to start a coffee business from a cargo bike. I will use a baratza Vario grinder. I want to ask you about a method of brewing 20L/hour.

I want to boil (93C) three litres of water. I will then add the coffee and stir for two/three minutes. I then want to pour the coffee through a large mesh screen into another pot before putting into a thermos airpot for self service.

I'm looking at the sieves on the McMaster-Carr website. I am just not sure about how many microns will allow the liquid to pass quickly enough.

Do any of you know the best hole size for sieving coffee in bulk quantities?

Any other advice would be greatly appreciated.
