I've tried one tablespoon of ground coffee from every 4 ounces up to with .5 ounce increments.  I'm using filtered water out of the fridge.  Beans which were roasted 3 days ago (and taste awesome at the coffee shop), Melitta white flavorpour filters (tried brown as well), I've cleaned everything in the coffee making process several times and have tried multiple grind settings on my Solis Maestro.  Coffee is still bitter and not even close to the coffee shop.   Baratza is sending me new burr's just in case btw.  Any suggestions would be greatly appreciated.  I'd like to try different combos of proven grounds/water ratio and grind.  And yes, I know taste is subjective with that, but I'd like to try something that is working for someone else.

do you rinse the filters with hot water to get rid of excess paper residue?

Wow....should that make this big of a difference?  I took your suggestion and the coffee was significantly better.  What do you use for coffee to water ratio by the way?  I figure I'm on a roll with your suggestions so far  :)

I usually do a little more than a scoop of beans per 8 oz, since my mug is 16 oz.  It's usually just right.  Sure, it's not scientific, but it brews a good cup.  But, I use twice as much for press and vac pot coffee.

1 scoop, I think, is 7 grams (ground) and I'm scooping whole beans.

Any professional barista will tell you that coffee is better dosed by weight than by volume...

At work, we use weight, but at home, we don't have a digital scale, so I wing it.

Also, you say you've used "filtered water".  IMO, "filtered water" is what you do at home (Britta, etc.)   It is NOT the same as bottled water (IMO) since the home filtering systems can only do so much.  IMO, I stick only with bottled water and noticed a GREAT improvement.  (Going on ~15 years now!)

I'll pick some up next time I'm out.  Anything is worth trying at this point.  After rinsing the filter, it made a definite improvement, but I don't feel it's quite there yet.  I'm currently using 1 measured tablespoon for every 6 oz with a little coarser then "drip setting" grind on my Solis Maestro.  I'm getting a digital scale as a christmas present, but the above converts to 1.17 grams of coffee per ounce (assuming the scoop I am using is truly a tablespoon...it says 7g on it and looks to be an exact duplicate in size to my other tablespoon measurement).  Anything wrong with the above that anyone can tell?

Try using less coffee, and/or a coarser grind.  Bitter usually means too much coffee or overextraction.  Overextraction can happen if the grind is too fine or if there is a lot of dust in the grind.  Some grinders will produce way too much dust regardless of the coarseness setting.  Getting new burrs should improve the consistency of the grind.

The amount of coffee to use depends on the grind, the beans, the machine and your taste.  You simply have to experiment to find the right balance with a new machine.  I use about 1g per oz of water, but that's with a Krups Moka Brew which is very efficient at extraction.  The only rule about coffee to water ratio is adjust to your taste.

Trying bottled can't hurt.  Britta filters can do a very good job, but it really depends on your specific tap water.  You say you use water from the refrigerator.  Why?  Water kept in the frig can pick up bad tastes.
