Subject: in your store, what do you do with coffee after it has brewed?
 

a friend and i are in the process of starting a coffee shop. we'd like to use a couple of vac pots to brew coffee for our customers. i've heard of the hazards in over heating coffee. my question is this: how long do i let fresh coffee stay on the burner? any thoughts, answers, or suggestions are more than appreciated.

Hey Matt - as soon as the coffee is brewed, pour it into a insulated airpot. Use a timer for the airpots, this way you will know how long that coffee has been in the airpot. 1/2 hour to 40 minutes is the maximum time I would suggest leaving the coffee in the airpot (insulated carafe). Sure, the coffee will stay hot much longer then 1/2 hour, but taste IMO declines rapidly and you can actually pick up on foreign flavors from the airpot itself.

You should actually "season" the airpots before putting them to actual use by brewing some coffee and letting it sit in the airpot overnight.  Yes, you'll want to clean it afterwards, but the metal taste will be less likely to come through.
