I have some friends that like flavored coffees. Is there a way to make these at roasting or are they mainly just roasted coffee with flavors added before packaging?

In my humble opinion, flavor added to coffee is just a way to cover poor quality beans. Roast and brew high quality beans and if you MUST add flavor, add it after the coffee has been brewed with one of the nearly two dozen flavored syrups on the market.

Instead of flavoring the coffee beans prior to grinding (and f'ing up your grinder for weeks on end with taint o' hazelnut mixed with the hint of cyanide (almond) and stale chocolate), go with flavored syrups instead.
The syrup flavoring is controllable and adjustable, a huge variety is available, and can be had in sugar free versions as well (if you're worried about the lifesaver-level of calories added).
