I have a Bunn BTX and I've noticed that sometimes the grinds will creep up the sides of the filter. One thing that I do to improve my results is to let the water flow for about five seconds or so to wet the ground and then wait around forty seconds to allow it to bloom before hitting it with the brew water. This really helps with fresh, home-roasted beans. Your commercial brewer may have programming for bloom cycles, pulse cycles, etc. that can help with that. During the bloom and during the first part of the brew I grab the handle of the brew basket and turn it so that the sprayhead jets hit all the coffee. If you still have trouble with the grounds creeping up, you may want to investigate what Bunn calls the Gormet basket which is a deeper basket designed for fresh coffee that keeps the bloom from hitting the showerhead and making a mess.
I like to grind my beans fairly fine because the brew cycle on my Bunn is pretty quick. What brew times are you seeing with yours? If you coarsen up the grinds and have a short brew time you could end up with underextracted coffee which may lead you to using more grinds than you need to to make it come out tasting right.
