Question, the espresso that I use seems to pull extremely frothy shots. I've had the roaster himself on site before and he says that they taste perfect when I extract them. However, if the machine is consistently pushing out 3oz of water for a double shot, how does each shot come out to almost 4 oz? I've only seen it with this particular roaster, and is actually something that made me choose it in the first place...
Creama on a shot can easily be 30% on the drink, mine are 90% creama that settles to about 30% on the shot. You are polling triple shots, not doubles a shot is 1oz a double is 2 oz and a triple is 3 oz, if you are doing this with 17 or so g of coffee then your shots are overextracted.
