Everyone,
First post on here. I'm seeking advice about how to perfect my V60 technique. I've scoured the internet and watched plenty of V60 videos, but now think its time to join the discussion.
I just got a Baratza Preciso grinder, and my V60 pour over brewing has become "soupy." I've tried settings as course as 25F and as fine as 21C. Obviously, the finer the grind the slower the overall extraction, but this soup is unusual. My extraction time (400 ML water; ~27 g of coffee) is about 3 minutes, after a 30 - 40 second bloom period.
Here's my description of a "soupy" brew: I have not been getting as much "burping" during my bloom (release of CO2), and i find that correspondingly, the water has been seeping through the grinds rather quickly, sort of coming up the sides, and then building on top. It's like there is a clog. Given the size of the hole in the V60, and the thinness of V60 specific filters, I know this device releases the water even faster than other pour over devices. What then, is the cause of my clog?
Could it be the beans? Do I need to adjust the filter after wetting it? Do I need to go significantly coarser or finer?

It might be that now your limiting factor is the hole in the bottom, and no longer is the dust in your grind?
I also have a Preciso, and I find that the grind has so little dust that it makes for a cleaner brew and a faster filter. If you have liquid outside the filter, then that seems to mean that it is not filtering through the bottom hole fast enough to keep up with the percolation from the filter. You don't mention what you used before the Preciso; if it was something like a whirly-blade or even a Vario, then you'd get more dust and a slower filter. Especially if the total brew time is the same or even less than before, I could see this explaining your situation.

Prior to my Preciso, I was using a Kyocera hand grinder. I don't think the hand grinder produced excessive dust, but it also didn't produce a very even grind. The Kyocera had a particularly difficult time with coarse grind, and based on the limited options for adjusting I found that my grind ended up either too fine, or reasonably coarse with tons of "boulders."
As a preliminary matter, here's something that would help a lot. Assuming we're using a roughly 1:16 ratio and seek a brew of moderate strength, with the V60, do folks prefer a finer or coarser grind?
For all pour-over coffee, I've always used a grind that's a good deal coarser than what I'd use for auto-drip. Does anyone use the V60 with coffee ground as fine, or finer, than what's common for auto drip?
I plan to do some experimentation this weekend. Unfortunately, I become pretty heavily caffeinated after more than about 14 oz/day and I find that the results of small batch brewing vary significantly from brewing ~400 ml at once. Still, if I find a grind that works and a way to avoid "soupiness," I think I can consider it a breakthrough.
