I bought 1lb of a Costa Rican Tarrazu from my roaster on Tuesday, and It was Roasted Monday. I was just curious on peoples opinions, or if there is an actual number, on when coffee reaches is peak of freshness.
I haven't drank any yet, as I thought 3 days of rest is the minimum, and If I drink it tomorrow, it will be at the peak of freshness. Maybe I am over-analyzing, I just think it's cool to get coffee with an actual roast date. He told me if I drank it the day of, or after roasting, it would be grassier and more acidic than normal.
3 days is probably the minimum, but beyond that I think it really depends on the coffee. Some coffees "peak" as late as 10 days (maybe later), while other coffees are well past their prime at that point.
Assuming you have your grinder and machine dialed in, if you notice any sharp tingly flavors, that may be a sign for more rest.

Anytime I have brewed within 24 hours after roasting, I have been bothered by the taste. Usually, my window is 1 day to 1 week after. I only roast what I'll be drinking within the week. Personally, the 2 and 3 day mark is always my favourite. Try keeping a notebook and brew the exact same way all week. Note your opinions, that's the best way to find out for yourself!

Actually, there is no rule for how many days. You just have the idea which flavors of coffee change slowly or quickly. The aromatics and flavor dissolves faster with the lighter roasts while the opposite or heavier dissipates slowly.

24-36 hours is fine for me for SO and Espresso Blends... which is right about when a bag is shipped and delivered to me, I automatically freeze in batches and leave some out to use (obviously lol). I've had some coffee's that some said took 7-10 days to peak, yet tasted way better initially too me (like 3 days) vs being weaker and losing flavors resting that long.
