Subject: Cold brew questions
 

Hi, I have a few questions about making cold brew out of a french press. I have made some batches, but none to well results. What bean to water ratio should I use? Should I put the coffee in a airtight container? Should I put the coffee in a dark room temperature area or in the refrigerator? What is double straining/filtering? Should the container be big enough for the coffee and water have some breathing space or small to where its clumped together? Any other tips/facts I should know about concerning anything cold brew? Thanks!

Are you brewing like normal then pouring over ice or letting chill etc? Or are you letting it steep like overnight and then making it (which is really what cold brew would be)?

I don't know if this will directly answer your questions, as there are a few unknowns as CMIN pointed out. But, FWIW, I will share the easiest/best way that I have come up with.  I don't use the french press, because I just don't find it makes enough at one time for the work.  I use a large glass beer pitcher and brew at 7 or 8 : 1 ratio of water in grams to coarsely ground coffee in grams.  [That ratio essentially ends up being double the coffee (or half the amount of water) as I would typically use for standard french press].  

Because the pitcher is so large, I prefer to add the coffee and water in layers to ensure more of the grounds are equally saturated, then give it a good stir/agitation, cover with some saran wrap and a rubber band over the top and let it set on the counter for about 24 hours.  I will usually stir once about half way through, and then once more prior to filtering.  

To filter, I simply line a kitchen strainer with paper coffee filters (pre-wet) and pour it through.  I do this twice for a cleaner cup, but some prefer it to be a bit more muddy.  Play with it and adjust the ratios, brewing time, and how you filter or how many times you filter to taste.  I've done the FP method, using metal filters, metal and paper, but I have found this to work best for my tastes.  If using the FP is your preference, I would start with a similar ratio to what I described above, cover or just use the lid, and let it sit.  I'm guessing if you weren't happy with your results, it has more to do with the brewing ratio being off, you have to use a lot of coffee.

Water ratio in a cold brew should depend on your choice but if it is done by batches, I think it's practical to start at stronger one.

The purpose of keeping your brew in an airtight container especially overnight is to avoid getting those unpleasant odors outside.

About double straining, I think it is referred also as filtering since you are pushing the plunger down and lifting the grounds out.
