Ok we talk about beans for the chocolate flavor, However, I am looking for that Milk Chocolate flavor (not bitter sweet or Dark) any suggestions

Brazilian beans are usually good for chocolate flavors. It all depends on how your roast them. You could always cheat by adding cocao (just a bit).

Intelligentsia Kid O has more of a brownie-batter flavor than a dark chocolate bar--closer, IMHO to milk chocolate.

I know Craig but that thread was just for chocolate, I am looking for "MILK" chocolate and the one mentioned on that thread that taste like Milk Choclate was more of a bittersweet, I had it before with a Panama Cafe de Eleta but everyone seems to be out of it

For milk chocolate you need cocoabeans, press them, add some cocoabutter, mmilkpowder and sugar and voila . . .

I didn't respond earlier because I couldn't think of anything.  By fortuitous circumstance, my coffee today has a very noticeable milk chocolate flavor.  The beans are Tanzanian Songea roasted just into 2nd crack.  The flavor didn't show up until today, six days after roasting.  The hidey flavors are nearly gone and the coffee has a strong milk chocolate flavor.

Sadly, Sweet Maria's is out of the AAA Songea.

Once upon a time there was Maui Mocca (sp?)
THAT had some milk chocolatey action happening and ROCKED!

Too bad that Kaanaapli plantation is no longer in business.
