La Costa Coffee Roasters is good as well, they are in North County (Carlsbad).  They roast onsite.

Cafe Moto is awesome.  They are downtown very near Petco park.  They will also give you a little tour of their very impressive roasting setup across the street.  Their retail outlet will make you anything you want coffee-wise, and their policy is not to charge for any drinks they serve to their customers, as they are strictly roasting and supplies.

I haven't found anything in North County. Calabria is the only real option as far as I can tell. Moto has potential but I haven't had much success with their beans (limited experience with their blends). I roast my own...pretty pathetic in a major city. If you ask the right person at the right time, Calabria will hook you up with green, too, but selling greens is not a priority for them. If you find any other options, please share!
