I'm having some trouble getting a really nice head of crema recently for some reason...what blend can I try that gives awesome crema?

Hi AW,

That can be from a multitude of things, but you asked for a blend. Try Malabar Gold produced by Dr. Joseph John of the Josuma Coffee Company. A good place to buy it green & roasted is from Coffee Wholesalers among others. {;-)

MG's very expensive as compared to
Intelligentsia's Black Cat Espresso Blend &
Kido Organic Espresso Blend, but MG's also available at WLL.Crema's not everything, (as in appearance) it's a matter of taste also or why drink it? {;-)

I regularly get ½ - 5/8" of settled amount of crema with MG!

thanx :)

I had Black Cat already, and got decent crema...I've tried a few blends since, and have not had identical results.

What other factors could come into play? I'm using fresh beans, ground immediately before use, WDT for distribution, mild-firm tamp, pour usually starts between 5-12 seconds after pump is activated...could it be my gaggia?

12 seconds is an awful long wait for the first drops...if you're grinding so fine that you're choking up the flow, you're not going to get good crema. Even after only 5 seconds, if you're not getting fairly significant drippage, you probably need to loosen up the grind.

but...if I loosen it up to the point where it starts after 5 secs, it produces a full double shot in about 15 secs...much too fast...any suggestions?

Well, you also said that you're tamping only medium hard...maybe when you loosen the grind, tamp somewhat harder. Those are the only two variables you really have easy control over, so you just have to find a balance. Otherwise it might be an issue with the machine making too little pressure...you'll obviously want to eliminate the possibility of grind/tamp problems before you start thinking down that expensive road. :) I suppose there's also the outside chance that your grinder needs some burr sharpening/replacement, if it's not giving you accuracy.

Are you getting an unusually large amount of sediment in the bottom of the cup? I find that I often do, if the grind is dialed down too fine.

one other consideration:
what type of filter basket are you using and how much coffee are you dosing in it? if you up the amount of coffee with the coarser grind that will also lengthen your shot time

You could try Sweet Maria's Liquid Amber blend when they offer it as their weekly roasted espresso blend.  Has really nice crema from what I can remember.  Some say it's similar to Malabar Gold.  If you wanted to try a SO coffee, straight shots of Monsooned Malabar always give me tons of crema but the taste isn't what everyone would enjoy since it's kinda "earthy".

Edit:  Is your machine cleaned regularly?  A dirty machine for me tends to cause issues with crema and also the taste.  Just a suggestion.
